This a fun shrimp casserole you can bring to a potluck. It's actually pretty healthy too!

  • 1 lb. shrimp
  • 1 bunch parsley, chopped
  • 2 Tbs. tomato paste
  • 1 wineglass dry white wine
  • 1/2 lb. chopped onions
  • 1 sm. piece celery, finely chopped
  • 1/2 C. olive oil
  • salt, to taste
  • pepper, to taste

Brown the chopped onions with the olive oil. Add the tomato paste and let boil a few minutes, stirring with a wooden spoon. Now add the wine, parsley, celery, salt and pepper, and permit to boil until almost cooked. While the above is being prepared, boil the shrimps in very little water for about 2 minutes. Then clean and put into a casserole with the sauce and boil for about 15 minutes. Serve hot.
