  • 1 pkg. rice noodles
  • 2 Tbs. butter
  • 1 pound shrimp, peeled, deveined
  • 1/4 C olive oil
  • 1 Tbs. white wine vinegar
  • 2 Tbs. fish sauce
  • 3 Tbs. white sugar
  • 1/8 Tbs. crushed red pepper
  • 1 small red pepper, sliced
  • 3 green onions, chopped
  • 1 lime, cut into wedges

Soak rice noodles in cold water 30 to 50 minutes, or until soft. Drain and set aside.

Heat butter in a wok or skillet. Sauté shrimp until browned. Remove, and set aside.

Heat oil in wok or skillet over medium-high heat. Add shrimp and cook for 5 minutes. Add softened noodles, vinegar, fish sauce, sugar and both types of red pepper. Cook until noodles are tender. Add green onions and mix for 3 minutes.

Serve warm and garnish with lime wedge.
