  • 1 pound of shrimp, peeled and veined
  • 1 pound of andouille sausage, diced
  • 1 pound of okra
  • 6 cups of chicken broth
  • 1 can of tomatoes, diced
  • ¼ cup of butter
  • ¼ cup of all-purpose flour
  • 1 yellow onion, chopped
  • 3 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon of paprika
  • 1 teaspoon of cayenne
  • 1 teaspoon of chili powder
  • ½ teaspoon of thyme
  • ½ teaspoon of oregano
  • Salt and pepper, to taste
  • Cilantro, to garnish

In a large pot over medium heat, melt the butter and then add flour, making sure to stir constantly for 10 minutes. Next, add the onions and garlic and cook until fragrant. Add the sausage and okra, then season with paprika, cayenne, chili powder, thyme, oregano, salt and pepper. Pour in the chicken broth, tomatoes and bay leaf and bring to a boil. Reduce the heat and simmer for 1 hour, or until thick. Finally, add the shrimp and cook for an additional 10 minutes. Serve on top of white rice, garnish with cilantro and enjoy!
