This refreshing salad is perfect on a hot day. The peppers add a bit of spicy heat to balance out the cold noodles.

  • 1 pound of shrimp, peeled and veined
  • 1 package of buckwheat noodles
  • 1 red chili pepper, sliced
  • 1 green chili pepper, sliced
  • 2 cups of fresh broccoli
  • 1 cup of fresh basil
  • 1 cup of fresh cilantro
  • Lime slices, to serve
  • Sesame seeds, to garnish

To begin, bring a large pot of salted water to a boil. Then, add the shrimp and let cook for 1 minute, or until pink. Remove the shrimp and transfer to a bowl of cold water to shock and stop from cooking further. Next, add the buckwheat noodles to the boiling water and cook according to package directions. Drain the noodles and rinse under cold water. Add the noodles to a bowl, then top with the peppers, broccoli, basil, cilantro, and shrimp. Drizzle with lime juice and sesame seeds. Serve with a dressing of your favorite dressing and enjoy!
