Shrimp with Tomatoes and Capers

Great quick and easy pasta, if you love shrimp and a bit of spicy flavor. The red pepper flakes along with the capers makes a good combo! And men love this dish!

Ingredients

  • 1 1/2 lb. clean fresh large shrimp
  • 1 (16 oz.) can diced tomatoes
  • 2 tbs. garlic, chopped
  • 2 tbs. green onions, chopped
  • 1 tbs. shallot, chopped
  • 1 Tbs. fresh basil
  • 2 Tbs. parsley, diced
  • 1/2 tsp. red pepper flakes
  • 1/4 C. white wine
  • 1 Tbs. capers
  • 1 tbs. lemon juice
  • 1/8 tsp. Salt
  • 1/8 tsp. pepper
  • 1 tbs. Parmesan cheese, grated
  • 2 tbs. Olive oil
  • 2 Tbs. butter
  • 1 lb. fettuccine noodles

Directions

Saute garlic, shallots and green onions in butter and olive oil. Remove from pan, add shrimp. Cook only until pink, about 3-5 minutes. Remove from pan. Add canned tomatoes, wine, all spices, parsley and basil and simmer for about 20 minutes. Add in the cooked shrimp. Serve over pasta and grated parmesan cheese.
