  • 2 boxes of Spanish Rice
  • 1 can Diced Tomatoes & Jalapenos
  • 1 Yellow Pepper chopped
  • 1 can Corn
  • 1 can Peas
  • ½ cup Sour Cream
  • 2 cups of Mexican or Cheddar Cheese
  • 1 Tbsp Paprika

Preheat oven to 325 degrees. Cook rice as directed on box. In a separate bowl, combine diced tomatoes and japalenos, yellow pepper, corn, peas, sour cream and 1 cup cheese, mixing well. Layer rice, mixture, paprika and rest of cheese in casserole dish until full. Bake for 25 min.
