Cedar plank salmon may seem like a gourmet dish, but it's really quite simple to prepare at home! All you need is a few ingredients, and this delicious meal will be prepared before you know it.

  • 4 six-inch untreated cedar planks
  • 1/2 C. oil (coconut or vegetable)
  • 2 Tbs. rice vinegar
  • 1/2 C. soy sauce
  • 1/2 C. scallions, chopped
  • 2 Tbs. ginger, grated
  • 2 tsp. garlic, minced
  • 4 lg. salmon fillets (approx 2 inches thick), boned and skinned

Soak the wood planks in water for at least 1 hour prior to preparing.

In a non-reactive bowl, mix all the remaining ingredients. Marinate for an hour (while the planks soak). Once marinated, remove fillets from marinade and place onto wood planks. Cook at 425 degrees on the middle rack for 20 minutes or until the fish is cooked to 145 degrees at its thickest point.
