  • 1 lb. macaroni
  • 1 Tbs. oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • 2 Tbs. flour
  • 1 (15 oz.) can crushed tomatoes
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. paprika
  • 1/2 C. sour cream
  • 2 Tbs. milk
  • 3 C. sharp cheddar cheese, grated
  • 1/2 C. panko bread crumbs
  • 1/4 C. fresh parsley, chopped, for garnish

Preheat the oven to 350 degrees and cook the pasta according to package directions. In a large skillet, heat 1 Tbs. oil and saute the onion for 5 minutes, or until tender. Add the garlic and cook for an additional minute. Stir in the ground beef, chili powder, salt, and pepper. Brown the meat and drain any excess fat from the pan. Sprinkle 2 Tbs. flour over the meat. Cook for an additional minute or two. Add the tomatoes and simmer on low. The sauce will thicken as it cooks.

Add the cooked macaroni to the beef mixture. Stir in 1/2 C. sour cream, 2 Tbs. milk, and 2 C. shredded cheddar cheese. Pour the mixture into a large casserole dish and top with the remaining cheese. Sprinkle with 1/2 C. panko bread crumbs. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly. Sprinkle with the fresh parsley before serving.
