This chicken salad can be used two ways: on bread or as a salad. And it's two times as tasty with jalepeños and lots of vegetables. I love it with shredded parmesan on top with some croutons tossed into a salad. Customize this chicken salad to your cravings any day of the week!

  • 1 lb. boneless chicken breast, cooked and cubed
  • 2 stalks celery, minced
  • 1 Tbs. parsley, chopped
  • 1 red bell pepper, chopped
  • 1 small red onion, minced
  • 1 jalepeño, seeded and minced
  • 1 Tbs. lemon juice
  • ¼ C. mayonnaise
  • 1 tsp. yellow mustard

Combine chicken, celery, parsley, red bell pepper, onion and jalepeño in a bowl. If you like extra spice, keep the seeds of the jalepeño or just add another one.
In a small bowl, mix together lemon juice, mayonnaise and mustard
Pour over chicken mixture.
To serve, spoon onto bread for a sandwich or mix with lettuce for a salad.
