  • 3 (8 oz.) pkg. cream cheese, room temperature
  • 3 eggs
  • 3/4 C. sugar
  • 6 graham crackers, crumbed
  • 3 Tbs. butter, melted

Put the cream cheese in a bowl and add the sugar. Mix until the sugar and cream cheese are well-blended. Add the eggs on at a time, and blend. In a separate bowl, mix the graham cracker crumbs and butter to form the crust. Choose a pan that fits easily in the bottom of the crockpot. Add the graham cracker mixture to the pan and pat it flat with a spoon. Add the cream cheese layer to the top. Add 2 to 3 C. water to the bottom of crockpot. Place the cheesecake pan in the crockpot, making sure to not let the water get into the pan. Cover and cook on high for 2 to 2 1/2 hours. The cheesecake will begin to crack on the sides. Let it cool for 30 minutes to 1 hour. Remove the pan and set in the fridge for at least 1 hour.
