  • 3 cups of penne, cooked to box directions
  • 2 cups of fresh basil leaves
  • ½ cup of olive oil
  • ¼ cup of pine nuts
  • ¼ cup of walnuts
  • 3 cloves of garlic
  • Parmesan cheese
  • Salt and pepper, to taste

Combine basil, olive oil, pine nuts, walnuts and garlic in a food processor and process until smooth, pulsing at first then slowly increasing the intensity.
Take 4 tablespoons of the pesto mixture and toss it with the penne.
Serve each portion topped with grated Parmesan.
The rest of the pesto can be saved for another batch of fresh pasta later in the week!
