  • 1 Box of Penne Pasta
  • 5 Slices of Bacon
  • 1 Cup of Sliced Cherry Tomatoes
  • 1 Cup of Spinach
  • 1 Minced Garlic Clove
  • ¼ Cup of Crumbled Feta Cheese
  • 2 Tablespoons of Olive Oil
  • 1 Pinch of Salt
  • 1 Pinch of Pepper

Begin by boiling water and cooking the pasta according to the package’s instructions. While the pasta boils, pour 1 tablespoon of the olive oil into a skillet and begin frying your bacon over a medium heat. Once it’s just about done, add in the garlic for a minute before stirring in the tomatoes. Cook this mixture for another 3-5 minutes.

Drain your pasta over the spinach so that you can wilt the leaves. Crumble the bacon into bite-sized pieces and then toss the noodles with the bacon, tomatoes, remaining olive oil, salt, and pepper. Top each serving with a few pieces of feta cheese and enjoy warm!
