  • 1 large potato, peeled and cut into ½-inch cubes
  • 1 large sweet potato, peeled and cut into ½-inch cubes
  • 2 carrots, peeled and chopped
  • 1 parsnip, peeled and chopped
  • 1 onion, chopped
  • 1-pound andouille sausage, sliced
  • 1 can (14 to 15-ounces) stewed tomatoes, with juices
  • 1-1/2 cups chicken broth
  • 2 teaspoons sugar
  • ½ teaspoon dried thyme
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup chopped fresh parsley

Grill andouille sausage for about 2 minutes and slice. Take out 4-quart slow cooker. Add potato, sweet potato, carrots, parsnip, onion, grilled andouille sausage, tomatoes (and juice), broth, sugar, thyme and pepper to slow cooker. Stir all of the ingredients and cover. Cook on low for about 7 hours. During the last 10 minutes of cooking, stir in parsley. Season with salt and pepper and serve.
