  • 2 C. cooked rice
  • 2/3 C. soy sauce
  • ¼ C. brown sugar
  • 1 T. cornstarch
  • 1 T. fresh ginger, minced
  • 2 cloves garlic, minced
  • ¼ tsp. red pepper flakes
  • 3-4 boneless chicken breasts, sliced
  • 1 T. olive oil
  • 2 C. broccoli florets
  • 1 C. sliced carrots
  • 1 onion, diced

In a bowl, whisk together soy sauce, brown sugar, and cornstarch until smooth; add in ginger, garlic, and red pepper flakes. Add chicken, cover, and refrigerate for at least an hour. In a skillet, heat oil, pour chicken and sauce into skillet, and cook until no longer pink. Add in onion, broccoli, and carrots. Cook and stir into sauce until tender. Toss with cooked rice and serve.
