  • 4 boneless, skinless chicken breasts
  • 2 tsp. dried thyme
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 tsp. olive oil
  • 1/3 C. water
  • 1/3 C. balsamic vinegar
  • 2 tsp. honey
  • 2 Tbsp. butter, cubed
  • roasted vegetables, for serving

Combine the thyme, salt, and pepper in a bowl. Season the chicken with the spices and heat a skillet over medium Add olive oil and cook the chicken for 3 minutes on each side. Remove and keep warm. Next, add water, vinegar, and honey to the skillet and bring to a boil for 2 minutes. Put in the butter and stir until melted and reduce the heat to medium low. Add the chicken to the pan and cook 3 minutes on each side. Serve the chicken with roasted vegetables and the glaze on top.
