  • Crust:
  • 8 tablespoons butter, melted
  • 3 tablespoons sugar
  • ¼ teaspoon salt
  • 1 ¼ cups flour
  • Filling:
  • 1 ½ cups milk
  • 1 teaspoon vanilla bean paste
  • 4 egg yolks
  • ½ cup sugar
  • ¼ cup cornstarch
  • 1 tablespoon butter, softened
  • 3 peaches, sliced
  • 2 tablespoons peach jam

Heat milk and vanilla bean paste in a saucepan until simmering. Whisk the egg yolks, sugar and cornstarch in a glass bowl. Whisk the milk into the mix and return to the saucepan, cooking until thickened, about 5 minutes. Remove from heat and stir in the butter. Cover the filling and wrap in plastic, setting aside to cool down.

Stir the melted butter, sugar and salt. Mix in the flour to form dough-consistency. Using a 9-inch pan with a removable bottom, flour the bottom and place the dough into the pan, pressing top the bottom and sides. Refrigerate for an hour before baking at 350°F for 10 minutes. Cool down to room temperature.

Pour the filling into the crust evenly. Place peach slices atop the filling. Bake tart for 20 minutes, or until the peaches and crust are golden. Place the jam and 3 teaspoons of water into a microwavable bowl and microwave for 20 seconds. Brush jam over peaches and refrigerate for 2 hours before serving.
