  • 1 pound ground chuck beef
  • 1 15-ounce can of sloppy joe sauce
  • 1 12-ounce package of frozen buttermilk biscuits.
  • 1 cup shredded cheese
  • 2 cups frozen tater tots
  • ½ cup yellow onion, diced

Let the tater tots and frozen biscuits rest on the counter until they reach room temperature.
Preheat the oven to 400F.
Brown the beef in a skillet on medium-high heat. Cook until most of the pink is gone and the beef has crumbled.
Drain the beef before adding onions to the pan. Cook for another minute before adding the sloppy joe sauce, then cook for another minute. Set aside.
In a muffin tin, press the frozen biscuits into the compartments. Smash 1-3 tater tots on top of each biscuit.
Fill each cup with the beef mixture, then bake for 10-12 minutes or until the biscuits are golden brown.
Top each cup with shredded cheese then place back in the oven for another minute or until the cheese is melted.
Let the cups stand for a minute before carefully removing from the muffin tin.
