  • Ingredients:
  • 2 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp garlic salt
  • ¼ tsp black pepper
  • ¼ tsp cumin
  • ¼ tsp smoked paprika
  • ⅛ tsp onion powder
  • ½ onion, sliced
  • ½ green pepper, sliced
  • ½ red pepper, sliced
  • 6 corn tortillas

First, you must prepare your beef before adding it to the slow cooker. Heat 2 tbsp olive oil in a large skillet over medium heat. Then, add your beef roast and cook it 5-7 minutes per side, or until it’s very browned and crisped.

Next, put your seared roast into the slow cooker. In a small bowl, whisk together your garlic salt, chili powder, smoked paprika, cumin, and onion powder. Sprinkle this spice mixture over the roast, and then add your onions and peppers.

Finally, cook the entire mixture on HIGH for 3-4 hours, or until beef is melt-in-your-mouth tender.
