  • 1 Tbs. vegetable oil
  • 1 large onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 28-oz. crushed tomatoes can, undrained
  • 2 15-oz. black beans can, drained and rinsed
  • 1 10-oz. can enchilada sauce
  • 1/2 cup shredded Cheddar cheese

In a large saucepan, heat oil over medium-high heat. Add onion and bell pepper. Cook 5 minutes while stirring occasionally. Add bell pepper, onion and remaining ingredients in crockpot. Mix ingredients well. Cook on low for 4 to 5 hours. When done, top with shredded cheese.
