  • 1 C. yellow onion, chopped
  • 1 (16 oz.) package smoked sausage, cut into ¼-inch thick slices
  • 2 cloves garlic, minced
  • 1 (14 oz.) can chicken broth
  • 2 tbs. brown sugar
  • 2 tbs. tomato paste
  • ½ tsp. dried thyme
  • ½ tsp. ground black pepper
  • 3 (16 oz.) cannellini beans, rinsed and drained
  • 1 bay leaf
  • 2 tbs. fresh parsley, chopped

Preheat oven to 375 degrees F.

Coat a Dutch oven with non-stick cooking spray and warm over medium-high heat. Add onion and sausage to Dutch oven. Cook for 5 minutes or until tender. Add garlic and cook for 2 minutes. Mix in chicken broth, brown sugar, tomato paste, thyme, ground pepper, beans and bay leaf. Stir ingredients well and bring mixture to a boil. Decrease heat and simmer for 5 minutes. Transfer to oven.

Bake for 15 minutes. Remove bay leaf and serve warm.
