The different beans in this bake add texture and color that make it more fun and delicious! If you use spicy smoked paprika, you don’t need the red pepper, but it does add extra spice!

  • 4 applewood-smoked bacon slices, chopped
  • 2 C. onion, finely chopped
  • 1 C. green bell pepper, finely chopped
  • 6 cloves garlic, minced
  • 3/4 C. no-salt-added tomato sauce
  • 1/3 C. packed brown sugar
  • 1 Tbs. cider vinegar
  • 1 Tbs. honey
  • 1 Tbs. Dijon mustard
  • 1 tsp. smoked paprika
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. ground red pepper
  • 1 (15-oz.) can black beans, rinsed and drained
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • 1 (15-oz.) can Great Northern beans, rinsed and drained

Heat the oven to 325 degrees. In a large heated skillet, cook the bacon for 5 minutes, or until crisp. Remove the bacon from the pan and reserve 1 ½ Tbs. of pan drippings. Set the bacon aside. Add 2 C. onion, bell pepper, and minced garlic to pan with drippings and sauté for 6 minutes, or until tender. Remove from heat and slightly cool. In a bowl, combine the tomato sauce, brown sugar, cider vinegar, honey, Dijon, smoked paprika, salt, pepper, and ground red pepper. Whisk to mix. Stir in the onion mixture and the beans. Pour the bean mixture into a greased baking dish. Cover and bake for 30 minutes. Uncover and bake for another 30 minutes.
