  • For the Cake:
  • 1-1/2 cups of butter, softened
  • 3 cups of sugar
  • 5 large eggs
  • 2 tablespoons of lemon juice
  • 1 teaspoon of vanilla extract
  • 3 cups of all-purpose flour
  • 3/4 cup of 7UP soda
  • For the Glaze:
  • 1-1/2 cups of confectioners' sugar
  • 1 tablespoon of lemon or lime juice
  • 1 to 2 tablespoons of 7UP soda

First, preheat the oven to 350°.
Then, add grease and flour to a 10-in. plain tube pan.
Then, in a bowl, mix the butter and sugar together until it becomes light and fluffy. After the mixture is fluffy, then add eggs, one at a time. Beat the mixture well after each egg addition. Then, beat in the juice and the vanilla. Finally, add the flour alternately with 7UP. Beating everything well after each addition.
Then pour the batter in the pan. Bake the batter for 65-75 minutes or until a toothpick inserted in the center comes out completely clean. Let the batter cool in the pan for 20 minutes before putting it on a wire rack to let it cool completely.
For the glaze, in a bowl, mix the confectioners' sugar, lemon juice and 7UP to get your desired consistency.
Then drizzle the glaze over the cake.
