  • 6 large tortillas, heated
  • 2 cups of cooked white rice
  • 1 can of kidney beans (15 oz.)
  • 1 tablespoon of butter
  • 3 cloves of garlic, minced
  • 2 large chicken breasts, cut into bite sized pieces
  • 1 cup of coconut milk
  • ½ cup of white vinegar
  • ¼ cup of soy sauce
  • 2 tablespoons of oregano
  • 1 teaspoons of cayenne pepper powder
  • 1 teaspoon of paprika
  • salt and pepper, to taste

Melt butter in a pan over medium heat. Add minced garlic and sauté for a couple of minutes, then add chicken, cayenne pepper, paprika, oregano, salt and pepper and stir fry for 5 minutes. Add coconut milk, white vinegar and soy sauce and simmer for 10 minutes, stirring as needed. Once all the pieces of chicken are cooked through.
Assemble each burrito with beans, rice and the spicy adobo chicken. Wrap tightly, then serve!
