Spicy and cheesy going well together is a given, but who knew it could taste so amazing with roasted eggplant? This cheesy eggplant combination will open your eyes to a whole new world of veggie flatbreads.

Ingredients

  • 2 large pieces of flatbread
  • 1 small eggplant, sliced then cut into bite sized pieces
  • 2 green chili peppers, sliced
  • 1 small onion, chopped
  • 2 tablespoons of Sriracha sauce
  • 1 tablespoons of ketchup
  • 1 tablespoon of chili oil
  • 1 cup of mozzarella cheese
  • 2 tablespoons of olive oil

Directions

Preheat oven to 375 degrees Fahrenheit.
Sprinkle mozzarella over both pieces of flatbread. Place on a greased sheet pan and set aside.
Heat oil over medium-high heat in a pan. Add eggplant and sauté for 5 minutes until slightly tender. Sprinkle with salt before removing from heat.
Evenly distribute the cooked eggplant and green chili peppers between the two flatbreads on top of the cheese.
In a bowl, combine Sriracha, ketchup, chili oil and onion. Top the flatbread with the spicy onion mixture.
Place sheet pan in the middle rack of your oven and bake for 10-15 minutes.
Slice and enjoy!
