Who knew canned biscuits could be used to make empanadas? Throw in some spices to your beef so you get a truly authentic taste. The adobo dipping sauce will give you a break from all the spiciness.

  • 3/4 lb. ground beef
  • 1 C onion, diced
  • 1/4 tsp. red pepper flakes
  • 1/2 tsp. salt
  • 2 Tbs. red wine vinegar
  • 1/2 C chopped fresh cilantro
  • 1 can pre-made biscuit dough
  • 1 C shredded Monterey Jack cheese
  • 1 C mayonnaise
  • 1 Tbs. adobo sauce
  • 1/2 lime, juiced

Heat oven to 350 degrees.

Heat a skillet over medium-high heat. Add beef, onion, pepper flakes and salt and stir. Cook 5 to 6 minutes, or until beef is browned. Remove from heat and stir in vinegar and cilantro.

Separate dough into 8 biscuits. Roll each biscuit into a 6-inch round. Scoop 1/4 cup of beef mixture and 2 tablespoons cheese on the center of each round. Fold each in half and press edges to seal.

Place on cookie sheet. Bake 24 to 26 minutes, or until golden brown.

Mix together the mayonnaise, adobo sauce and lime juice to make dipping sauce.

Serve warm.
