Quick, easy and filling, this spicy chicken burrito bowl is a great go-to when you’re super hungry but short on time. It also makes for a great meal-prep dish!

  • 1 bowl of cooked brown rice
  • 1 boneless and skinless chicken breast
  • 1 avocado, pitted and diced
  • 1 lime, wedged
  • 1 bell pepper, thinly sliced
  • ½ small red onion, thinly sliced
  • 1 small tomato, thinly sliced
  • ¼ cup of sweet corn
  • ¼ cup of spinach
  • ¼ cup of garbanzo beans
  • 1 tablespoon of garlic powder
  • 1 tablespoon of Spanish paprika
  • 2 teaspoons of red chili powder
  • 1 teaspoon of cumin
  • olive oil
  • salt and pepper

In a small container, mix up the Spanish paprika, red chili powder, cumin, garlic powder, and salt and pepper. Rub the mixture thoroughly all over the chicken.
Heat olive oil over medium heat in a pan and cook the coated chicken breast (about 4 minutes on each side until cooked through. Slice thinly and set aside.
Assemble your burrito bowl by first layering the bowl with rice, then avocado, bell pepper, onion, tomato, corn, spinach, garbanzo beans and the sliced chicken breast.
Serve with a side of lime wedges. Enjoy!
