  • 5 sweet potatoes
  • 1 cup of kale
  • 2 tablespoons of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of cayenne
  • 1 teaspoon of garlic powder
  • 1 teaspoon of cumin
  • ½ teaspoon of pepper
  • ¼ teaspoon of salt

As the oven preheats to 400 degrees, poke the sweet potatoes several times with a fork and then coat with olive oil. Bake the sweet potatoes for 45 minutes, or until tender. In the meantime, mix together the paprika, cayenne, garlic powder, cumin, pepper, and salt until well combined. Remove the sweet potatoes from the oven and slice down the center. Sprinkle about a teaspoon of the seasonings into potatoes and mash to mix. Top with about ¼ cup of kale and sprinkle feta cheese on top. Return to the oven and cook for an additional 15 minutes, or until kale has wilted. Serve as a side dish or as a healthy snack!
