  • 1 pound cod
  • 1 tablespoon butter
  • 5 minced garlic cloves
  • 1 chopped jalapeno pepper
  • 1 teaspoon cumin
  • 1 tablespoon paprika
  • 1 can of tomato sauce
  • 1 cup cream
  • ½ cup chopped cilantro
  • Salt and pepper to taste

Season the fish with salt and pepper. Broil the cod in the oven for 10 minutes on each side. Allow the fish to cool and then break it into smaller chunks. Melt the butter over medium heat in the pan. Add the jalapeno and garlic and sauté for 1 minute before stirring in the remaining ingredients. Simmer for 20 minutes and then add the fish and simmer for 10 more minutes.
