  • 1 medium cabbage, shredded
  • 1 carrot, peeled and shredded
  • ½ cup of onion, chopped
  • ½ cup of mayonnaise
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon distilled vinegar
  • 1 tablespoon white sugar
  • ½ teaspoon of celery salt
  • ½ teaspoon of pepper
  • ½ pound of boneless chicken breast
  • 1 cup of flour
  • 1 egg
  • 4 tablespoons of buttermilk
  • 1 tablespoon of cayenne
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • ½ teaspoon of smoked paprika
  • Salt and pepper, to taste

For the coleslaw:
Whisk together the mayo, mustard, vinegar, sugar, celery salt, and pepper until smooth. Next, add the cabbage, carrot, and onion and stir together. Cover and chill in the fridge while the chicken is being prepared.

For the chicken sandwich:
While a skillet heats with an inch of frying oil, whisk together the egg and buttermilk then toss the chicken in the mixture. In a separate bowl, add the flour, cayenne, garlic powder, onion powder, paprika, salt, and pepper. Smother the chicken in the seasoning then add the chicken to the oil and fry for 10 minutes. Place the chicken on a burger bun with pickles and a heaping ½ cup of coleslaw. Serve with a side of fries and enjoy!
