Ramen noodles aren't just a thing college students invest in. This spicy ramen noodle soup makes for a delicious lunch or dinner meal regardless of age. Add some more spice if you really need a kick.

  • 2 Tbs. sesame oil
  • 2 Tbs. Sriracha hot sauce
  • 1 onion, diced
  • 1tomato, diced
  • 1 Tbs. ginger, grated
  • 5 cloves garlic, minced
  • 1/2 tsp. salt
  • 4 C vegetable broth
  • 2 C water
  • 1 Tbs. soy sauce
  • 1 tsp. rice vinegar
  • 3 pkg. ramen noodles
  • Basil leaves, for garnish

Bring sesame oil and Sriracha to a simmer over medium-heat. Add the onion and tomato and cook for 4 minutes, stirring occasionally. Add the ginger, garlic and salt. Cook for 2 minutes.

Add 2 cups of water, place mixture in a blender or food processor and pulse until smooth.

Return mixture to the pot and add the broth. Add soy sauce and vinegar and simmer for 8 to 10 minutes.

Add the ramen noodles to the broth and simmer for an additional 2 to 3 minutes, or until the noodles have softened.

Serve soup warm in a bowl and garnish with basil.
