  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper sliced
  • 4 chili peppers, sliced
  • 1 C corn kernels
  • 1 C peas
  • 1 C beans
  • 1 C carrots
  • 1 lb. chicken breast, cut into bite-size pieces
  • 1 Tbs. cumin
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 Tbs. olive oil, divided
  • 1 Tbs. hot sauce

In a small bowl combine the cumin, cayenne, garlic powder, salt and black pepper and combine half of it with the sliced vegetables and half with the sliced chicken.

Heat olive oil in a skillet. Add the chicken and cook on high heat until done.

Remove the chicken from the pan and add in the onions, peppers, corn, peas, beans and carrots. Cook on high for one to two minutes, or until a light brown color appears.

Serve in a bowl and top off with your favorite hot sauce.
