  • 2 lb. boneless, skinless chicken breasts or thighs
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (14 oz.) can stewed or diced tomatoes
  • 1 Tbs. fresh ginger, minced
  • 3 Tbs. Sriracha hot sauce
  • 1 Tbs. distilled white vinegar
  • 1 Tbs. honey
  • 1 tsp. sesame oil
  • 2 Tbs. brown sugar
  • 2 Tbs. fish sauce

Combine all the ingredients except the chicken in a crockpot. Mix well. Add in the chicken, making sure to push it into the sauce until it's completely immersed. Cover and cook for 4-5 hours on high.
