There is such a thing as needing comfort food in the Spring, especially if you have seasonal allergies. Comforting, cheesy and warm, but still light and fresh tasting, this recipe replenishes your sense of wellbeing and will get you excited again for the rest of Spring.

  • 8 pieces of thin chicken breast cutlets, boneless and skinless
  • 2 cups of spinach
  • 1 cup of feta cheese
  • 1 cup of cream cheese, room temperature
  • 1 tablespoon of garlic powder
  • olive oil
  • salt and pepper

Preheat oven to 350 degrees Fahrenheit.
In a bowl, mix together spinach, feta, cream cheese, garlic powder and salt and pepper.
Flatten chicken cutlets with a mallet until thin and sprinkle some salt and pepper onto both sides of each chicken.
Scoop a spoonful of mixture onto each flattened piece of chicken. Gently roll it up and secure with a toothpick.
Place the rolled up pieces onto a greased sheet pan, brush tops surfaces with olive oil. Bake for 30-40 minutes until the chicken is all the way cooked through and no longer pink.
Let cool slightly, then remove toothpicks and serve!
