  • ½ cup of frozen mixed berries
  • ¼ cup of apple cider vinegar
  • ¼ cup of extra virgin olive oil
  • 2 tablespoons of honey
  • 2 cups of spinach
  • ½ cup of strawberries, sliced
  • ¼ cup of blueberries
  • ½ of a red apple, sliced
  • ¼ of a small red onion, sliced
  • 1 tablespoon of walnuts
  • ½ tablespoon of feta cheese

For the vinaigrette:
Puree the berries, apple cider vinegar, olive oil, and honey in a blender at a high speed until the mixture is smooth. If desired, run through a strainer to remove any excess seeds. Store in a mason jar and refrigerate leftovers. This makes 1 cup of vinaigrette dressing.

For the salad:
In a large bowl, toss spinach, strawberries, blueberries, apple, and red onion together. Once the salad is mixed, top with vinaigrette, walnuts, and feta cheese.
