  • 4 medium red potatoes, cut into quarter slices
  • 1 (9-oz.) pkg. baby spinach
  • 2 Tbs. butter, melted
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 C. whipping cream
  • 1/8 tsp. nutmeg
  • 1/2 C. Parmesan cheese, grated

Preheat oven to 350 degrees F. Place spinach in large boiling pot of water and cook for 1 minute. Drain. Rinse in cold water and squeeze excess water. Layer potatoes and spinach in 11-by-7-inch greased baking dish. Drizzle with butter. Sprinkle salt and pepper on top. Mix cream and nutmeg in bowl. Pour over top of casserole. Bake 45 to 50 minutes. Remove from oven. Sprinkle with cheese. Return to oven and bake for 10 to 15 minutes or until cheese is lightly brown.
