  • 1 cup of polenta
  • 4 cups of water
  • ¼ cup + 1 tablespoon of olive oil
  • ½ cup of Parmesan cheese
  • 1 package of prosciutto
  • 6 cups of spinach
  • 1 tablespoon of garlic powder
  • salt and pepper

In a large pot, bring water to a boil and stir in polenta and some salt. Cook for about 25-30 minutes, stirring occasionally, until thick and creamy.
In a pan, heat a tablespoon of olive oil over medium heat and lightly sauté the spinach with garlic powder, salt and pepper for about 5 minutes; set aside.
Once the polenta is finished, stir in the ¼ cup of olive oil and Parmesan. Add salt and pepper to taste.
Serve each serving of polenta topped with spinach and prosciutto!
