  • 1 T. olive oil
  • 1 shallot, diced
  • 10 oz. spinach, cooked and finely chopped
  • Salt and pepper to taste
  • ¼ C. ricotta
  • 1 egg
  • 1 tsp. lemon juice
  • 4 boneless turkey breasts, pounded thin
  • ½ C. chicken stock

Preheat oven to 350 degrees. In a skillet, heat oil and sauté shallot until softened; transfer to a large bowl. Mix in spinach, salt, pepper, ricotta, egg, and lemon juice. Spread mixture evenly onto turkey breasts, roll up, secure with kitchen twine of toothpicks, and place into a baking dish. Pour chicken stock around rolled turkey breasts and bake for 40 minutes until cooked through.
