  • 2 cups of spinach, chopped
  • ½ cup of sun dried tomatoes
  • 1 onion, chopped
  • 2 cups of flour
  • ½ cup of milk
  • ½ cup of butter, melted
  • 2 eggs, beaten
  • 2 cups of feta cheese
  • 2 tablespoons of tomato puree
  • 2 tablespoons of garlic powder
  • Salt and pepper, to taste

Preheat oven to 350 degrees Fahrenheit.
In a bowl, mix milk, melted butter, beaten eggs and tomato puree. Gradually combine flour and stir until smooth; add garlic powder and a bit of salt and pepper. Fold in spinach, tomatoes, onion and feta.
Line a 12-muffin tin with greased/sprayed cupcake liners. Distribute batter evenly into each muffin cup and bake for 20-25 minutes.
