  • 1 lb. spinach pasta, cooked and drained
  • 1 (8 oz.) package cream cheese, softened
  • ½ stick butter
  • 2 C. heavy whipping cream
  • 1 C. half and half
  • 1 C. Parmesan cheese, shredded
  • 1 T. oregano
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp. dried parsley

In a large saucepan, combine cream cheese and butter over medium heat. As mixture begins to melt, whisk in cream, oregano, garlic, salt, pepper, and parsley. Pour in half and half and simmer while constantly whisking as mixture thickens. Reduce heat to low, stir in Parmesan until melted, and toss with pasta.
