  • 3 large potatoes, peeled and quartered
  • 8 tbs. butter
  • 1 ½ C. yellow onion, chopped
  • 1 C. carrot, diced
  • 2 1/2 C. split peas
  • 1 C. celery, diced

Place potatoes in a large pot. Fill pot with cold water until potatoes are covered with at least an inch of water. Bring to a boil. Decrease heat. Simmer for 20 minutes or until potatoes are soft.

Meanwhile, warm 4 tbs. butter in a large skillet over medium heat. Add onions, celery and carrots. Cook for 10 minutes. Stir in peas and cook for an additional 5 minutes. Transfer vegetable mixture to a 9x13-inch casserole in a single layer.

Preheat oven to 400 degrees F.

Place potatoes in a large bowl and top with remaining 4 tbs. butter. Mash until potatoes are smooth. Spread potatoes over vegetables. Bake for 20 minutes. Broil casserole for 3 minutes or until potatoes are well browned.
