  • 1 3/4 C. flour
  • 2/3 C. sugar
  • 1 pkg. instant pistachio pudding mix
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 1/4 C. milk
  • 1/2 C. canola oil
  • 1 tsp. vanilla extract
  • 2 drops green food coloring
  • 1 container cream cheese frosting
  • colorful sprinkles, optional

Preheat the oven to 375 degrees. Combine the flour, sugar, pudding mix, baking powder, and salt in a large bowl. In another bowl mix the eggs, milk, oil, and vanilla. Add the dry ingredients to the wet mixture and blend until smooth. Fill muffin cups with the batter and bake for 20 minutes until a toothpick comes out clean. Cook 10 minutes. Dye the frosting green and pipe it onto the cupcakes. Top with sprinkles and serve.
