This is an easier alternative to the classic Mille-feuille. This is a great dessert to serve to kids as a fresher alternative to treats like s’mores.

  • 1 package of graham crackers
  • 3 cups of fresh strawberries, diced
  • 1 cup milk
  • 3 egg yolks
  • 8 tablespoons of sugar, divided
  • 2 ½ tablespoons of flour
  • 2 tablespoon of cornstarch
  • 1 teaspoon of vanilla
  • Fresh strawberries, to garnish
  • Powdered sugar, to garnish

In a medium pot, bring the milk, sugar, and vanilla to a boil. Then slowly add the egg yolks, cornstarch, and sugar. Whisk together until a thick cream forms, then stir in the butter until melted. Remove from the heat, then stir in the strawberries. Place a layer of plastic wrap directly on the surface of the cream and place in the fridge to cool. To construct the mille-feuille, begin by laying down one layer of graham crackers. Then scoop the strawberry filling and repeat for a second time. Top with a few additional whole strawberries and a sprinkle of powder sugar. Serve and enjoy!
