  • Crust:
  • 2 cups graham crackers, crushed finely
  • ¼ cup sugar
  • 4 tablespoons butter, melted
  • Filling:
  • 16 oz cream cheese, room temperature
  • ½ cup sour cream
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • ½ teaspoon vanilla extract
  • ¼ cups sugar
  • 1 egg
  • 2 cups strawberries, sliced

Preheat the oven to 350°F and spray a pan, with a removable bottom, with non-stick spray. In a small bowl, whisk together the cracker crumbs, sugar and butter until well blended. Press the mix evenly into the pan and bake for 5 minutes. Remove and let chill. In a separate bowl, beat the cream cheese on medium until smooth. Mix in the sour cream, lemon zest, lemon juice, vanilla, egg and sugar until well mixed. Pour into the crust spreading evenly. Bake for 15-20 minutes or until crust is golden brown. Remove the tart and let cool. Decorate with sliced strawberries, cover and refrigerate before serving.
