  • 3 T. cornstarch
  • 2 T. all-purpose flour
  • ΒΌ tsp. salt
  • 1 C. sugar, divided
  • 3 C. half-and-half
  • 6 egg yolks
  • 2 tsp. vanilla extract
  • 2 C. chocolate cookie crumbs
  • 1 stick butter, melted
  • 1 carton strawberries, sliced
  • 1 T. orange liqueur

In a saucepan, whisk together cornstarch, flour, salt, and 2/3 cup of sugar over medium heat. In a bowl, whisk together half-and-half and egg yolks; whisk slowly into saucepan mixture. Bring to a boil while whisking constantly and cook for about a minute. Remove from heat, pour into a bowl, cover, and refrigerate overnight. Preheat oven to 350 degrees. Combine chocolate cookie crumbs and melted butter and press into the bottom and sides of a pie pan. Bake for 10 minutes and set aside to cook. Spoon cream mixture into cooled crust. In a bowl, toss strawberry slices with orange liqueur and place them on top of the pie. Chill until ready to serve.
