  • 3 eggs, beaten
  • 1/2 C. milk
  • 1/2 tsp. almond extract
  • 1/4 C. sugar
  • 1 C. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • Canola oil
  • 5 slices white bread
  • Strawberry jam
  • Powdered sugar

In a bowl, mix together eggs, milk, almond extract and sugar until mixed well. Mix flour with baking powder and salt in a separate bowl. Gradually stir flour mixture with egg mixture. Heat oil in deep fryer to 375 degrees F. Spread jam on one bread and top another to make a sandwich. Trim the crusts and cut sandwiches in round circles. Dip each circle in batter. Fry sandwiches for 1 to 3 minutes or until golden brown. Drain and cool on wire rack. Sprinkle with powdered sugar.
