  • 2 boneless, skinless chicken breasts
  • 1 Tbs. minced garlic
  • 1 Tbs. vegetable oil
  • 4 lb spinach
  • 3 C. cauliflower, chopped
  • 1/4 C. sour cream
  • 1/4 C. Pepper Jack cheese
  • 4 slices bacon
  • 4 toothpicks

Preheat oven to 375 degrees. Butterfly each chicken breast and season each side with desired seasonings.  With a mallet, pound the chicken breast to desired thickness. Set aside. In large skillet heat oil, add spinach and stir until wilted. Remove from heat. Stir in sour cream, cauliflower and cheese. Stuff each chicken breast with the stuffing. Roll the chicken up. Stick with toothpicks to hold on. Bake on cookie sheet at 375 degrees for 35-45 minutes. Turn up heat to 400 degrees and bake for an additional 10-15 minutes or chicken is browned. Remove toothpicks, slice chicken and serve. Garnish with extra cheese if desired.
