  • 1 tsp. Olive Oil
  • 1 large bunch Swiss Chard Leaves, chopped roughly with stems removed
  • 2 cloves Garlic, chopped
  • 6 Eggs, beaten
  • 6 Green Onions, chopped
  • 1 1/2 tsp. Fresh Dill
  • 1/2 cup Gluten-Free All-Purpose Baking Mix
  • 1/8 tsp. Ground Pepper
  • 1/4 tsp. Salt

Preheat oven to 350 degrees. Spray a 9x12" baking dish with nonstick cooking spray. Heat the olive oil in a large skillet over medium-high heat. Add the chard and garlic, then sauté for about three minutes until chard is wilted. Pour the chard mixture into a large mixing bowl and let cool for 10 minutes. Add the eggs, green onions, dill, baking mix, pepper, and salt, and mix thoroughly. If the batter seems too dry or thick, add 1/4 cup of skim milk. Pour the batter into the baking dish. Bake about 40 minutes until the quiche is set in the middle and the top is golden brown. Let cool before cutting and serving.
