Ah its the summer at last and it is time to dust off that grill and get it ready for that summer cooking. This grilled skirt steak recipe will stick with you at any summer outing and is perfect to cook for guests.

  • 2 cloves garlic (minced)
  • 1 T. ginger (minced)
  • 1 1/2 lb. skirt steak
  • 2 red bell peppers (chopped)
  • 5 small shallots
  • salt and pepper
  • 1/2 C. soy sauce
  • 1 tsp barbeque sauce

In a large bowl, mix together soy sauce, barbeque sauce, salt, pepper, garlic, ginger.
Cut steak across grain on a diagonal into 1/4 inch slices.
Place pieces of steak in the mixture and let sit for 2 hours in fridge.

Preheat grill to high heat. Thread shallots, steak and bell pepper on skewers.

Oil the grill grate. Grill skewers 3 minutes per side, or to desired doneness.
