  • 2 C. uncooked orzo pasta
  • 1/2 C. chopped rosemary sprigs
  • 1/3 C. chopped sun-dried tomatoes
  • 2 Tbs. olive oil
  • 3/4 C. shaved Pecorino Romano cheese
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper

Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente. Drain and set aside.
In a large bowl, toss together the orzo, rosemary, whole sun-dried tomatoes, olive oil, salt and pepper. Shave large pieces of Romano cheese over the top and more tomatoes and rosemary if desired.
Serve warm or chilled.
