  • ½ box of orzo (8 oz.)
  • 1 cup of steamed broccoli
  • ½ cup of cooked peas
  • ½ cup of cooked asparagus, chopped
  • 5 medium tomatoes, sliced
  • 1/3 cup of olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of honey
  • ½ cup of parmesan cheese
  • salt, pepper

Cook the orzo in a large pot according to the box directions.
In a small bowl, whisk together olive oil, apple cider vinegar and honey, with salt and pepper to taste, to make the dressing.
Once the orzo is cooked, drain well and toss it with a tablespoon of the dressing, and let cool. Make sure that the veggies (broccoli, peas, asparagus) you have prepared are also cool.
Once cool, add the broccoli, peas, asparagus, tomatoes with the rest of the dressing into the pot of orzo and toss. When the dressing is thoroughly distributed, add parmesan cheese and toss some more.
Add a bit more salt and pepper to taste, then serve!
